Waterford Distillery was founded in 2015 in the historic port city of Waterford, in the southeast of Ireland, within a repurposed Guinness brewery. The driving force behind the project is Mark Reynier, who previously revived Bruichladdich in Scotland and brought a similarly philosophical approach to Irish whisky. Waterford's defining concept is the application of 'terroir' to whisky: each farm's barley harvest is distilled, matured, and bottled separately, producing single farm origin expressions that bear the names of the individual farms — such as Rathclogh, Ballymorgan, and Hook Head. The distillery works with biodynamic, organic, and conventional Irish barley varieties, treating the land as a fundamental ingredient. The result is a series of whiskies that invite drinkers to consider how soil, microclimate, and farming practice shape what ends up in the glass. Fresh orchard fruit, meadow hay, white flowers, and delicate spice are characteristic notes, with a clean, vibrant profile that challenges many assumptions about Irish single malt.
