Stauning Rye is a landmark expression from Denmark's Stauning Whisky distillery, established in 2005 when nine friends converted a butcher's shop in rural Jutland into a working distillery. What began as a weekend experiment driven by curiosity has evolved into one of Scandinavia's most celebrated whisky projects. The rye whisky is crafted entirely from locally grown Danish rye, processed using traditional floor malting — a labor-intensive method that allows the grain's natural character to develop at its own pace. The whisky is distilled in small direct-fired copper pot stills, a choice that imparts a richly textured and expressive spirit. On the nose, Stauning Rye reveals sweet rye spice, wildflowers, and subtle earthy tones. The palate follows with warming baking spice, a gentle smokiness, and a lingering fruity sweetness.
