Starward Nova is the flagship single malt from Starward Whisky, a Melbourne-based distillery founded by David Vitale in 2007 and later supported through a partnership with William Grant & Sons. What sets Nova apart from its global peers is its exclusive maturation in Australian red wine casks — specifically Apera (Australian Sherry) barrels — which impart a generous depth of fruit-forward sweetness, velvety texture, and lingering warmth. Melbourne's notoriously volatile climate, capable of swinging through four seasons in a single day, accelerates the interaction between spirit and wood, allowing a complexity that would take far longer to develop in cooler, more stable environments.
