Shizuoka Distillery was established in 2016 by Gaiaflow, nestled in the foothills of Mount Fuji in Shizuoka Prefecture, central Japan. The distillery draws on exceptionally pure Alpine water and a lush, forested environment that lend a distinctive freshness to its spirit. One of its most celebrated features is the use of a wood-fired pot still salvaged from the legendary Karuizawa Distillery, operating alongside a more conventional steam-heated still. This combination of old and new produces a layered, complex new-make spirit that matures gracefully in a variety of cask types. Shizuoka whiskies are generally characterized by bright fruitiness, floral delicacy, and a clean, mineral-edged palate that reflects the purity of the local water source. The distillery has also made a commitment to sourcing domestic barley and to environmentally conscious production practices. Within just a few years of releasing its first expressions, Shizuoka earned notable recognition at international spirits competitions, cementing its reputation as one of the most promising new voices in Japanese whisky.
