Kilchoman stands as the first farm distillery established on Islay in over 125 years, founded in 2005 with a resolute commitment to reviving the island's age-old tradition of small-scale, agricultural whisky production. Machir Bay, the distillery's flagship expression, takes its name from the wild, windswept bay on the western shore of Islay — a landscape that seems to breathe directly into the spirit itself. The whisky is matured primarily in bourbon barrels and finished in Oloroso sherry casks, achieving a carefully considered balance between coastal sweetness and measured peaty smoke. Tasting notes revolve around salted caramel, ripe pear, vanilla, cinnamon and a gentle but persistent peat presence that never overwhelms. Unlike some of Islay's heavily sherried or intensely peated drams, Machir Bay invites a broader audience while remaining unmistakably rooted in its island origins. Kilchoman grows its own barley, malts on-site and distills in copper pot stills, making it one of the few genuinely grain-to-glass operations in Scottish whisky. Machir Bay is the most consistent and accessible chapter of that compelling story.
