The distillery draws its singular character from the land itself: Orkney's own heathery peat, used to dry the malted barley on-site, imparts a floral, aromatic smokiness that sets it apart from the pungent, coastal peats of Islay. The resulting single malts balance honeyed sweetness, orange zest, dried fruits, and a gentle, lingering smoke. Maturation in European and American oak sherry casks adds further richness — dark chocolate, sultanas, and warming spice. Highland Park has long celebrated its Norse heritage through Viking-themed expressions and limited releases bearing mythological names, building a devoted following among collectors and enthusiasts alike.
