Hatozaki is produced by Eigashima Shuzo at their Kaikyo Distillery in Akashi, a coastal city in Hyogo Prefecture, Japan. Eigashima Shuzo traces its origins back to 1856 and holds the distinction of being among the earliest holders of a whisky production license in Japan, issued in 1919. The name Hatozaki is inspired by the historic Hato Lighthouse that stands watch over the Akashi Strait, lending the brand an identity rooted in maritime heritage and quiet resilience. The whisky is crafted using traditional double distillation methods, with expressions matured in a combination of mizunara oak, bourbon, and sherry casks. The resulting profile is elegantly balanced — notes of vanilla, gentle spice, dried fruit, and a soft coastal salinity weave together in a distinctly Japanese style.
