FEW Spirits was founded in 2011 by Paul Hletko in Evanston, Illinois — a city historically known as a stronghold of the American temperance movement, home to Frances Elizabeth Willard, the celebrated prohibitionist leader. The name FEW is a direct and deliberately ironic tribute to her initials, anchoring the distillery in a layer of cultural and historical complexity rarely seen in the craft spirits world. Operating as an independent, small-batch producer, FEW Spirits crafts American Bourbon, American Rye, and Straight Malt whiskies with locally sourced grains wherever possible. The Bourbon expression is particularly noted for its sweet corn backbone, hints of citrus zest, vanilla, and a warm, approachable spice. The Rye offers a more assertive, pepper-driven character balanced by fruit and caramel undertones.
