Caol Ila, Gaelic for 'Sound of Islay', takes its name from the narrow strait that separates the island from its neighbour Jura. Founded in 1846 by Hector Henderson, the distillery sits on a secluded rocky cove on the northeastern shore of Islay, its whitewashed walls gazing out across the shimmering waters toward the Paps of Jura. Now part of Diageo, Caol Ila is the largest distillery on Islay by volume, yet this industrial scale never diminishes the depth of character found in every expression. The whisky is defined by a signature interplay of assertive peat smoke, briny sea air, fresh lemon zest, and a surprisingly gentle floral sweetness underneath. The smokiness is bold but never brutal — it envelops the palate and then gracefully recedes, leaving behind a long, clean, mineral finish. The 12-year-old expression has long served as many drinkers' first meaningful encounter with Islay malts, offering a balanced and approachable introduction to the island's smoky tradition. Rarer distillery-exclusive and cask-strength bottlings reveal deeper layers of complexity, rewarding patience and curiosity in equal measure.
