Bimber Distillery was founded in 2015 in the Park Royal district of West London, making it one of England's few dedicated single malt whisky producers based in an urban setting. The distillery was established by Dariusz Plazewski, whose passion for fermentation began with home winemaking and brewing before evolving into an ambitious whisky venture. What sets Bimber apart is its uncompromising, grain-to-glass philosophy: milling, mashing, fermentation, and pot still distillation all take place under one roof, with meticulous attention paid to every stage of production. Releases are numbered, limited in quantity, and carefully matured in a combination of American oak ex-bourbon barrels, European oak casks, and various wine finishes, resulting in expressions that carry layers of orchard fruit, warming spice, vanilla, and subtle nuttiness. Bimber has played a meaningful role in reviving London's historical whisky-making tradition — a tradition that had long lain dormant in the city — and it has quickly earned admiration from whisky enthusiasts and collectors worldwide for the authenticity and craft that define each bottling.
