Balcones Distilling was founded in 2008 by Chip Tate in Waco, Texas, and quickly became one of the defining names of the American craft whisky renaissance. The distillery takes its name from the Balcones Escarpment, the geological fault line that separates the hot Texas plains from the cooler Hill Country highlands south of Waco. From the outset, Balcones set an unconventional ambition: producing single malt whisky in the American South, a region not traditionally associated with the style. The intense Texas heat dramatically accelerates barrel maturation, yielding rich, concentrated flavors in a fraction of the time required in cooler climates. The Brimstone expression, smoked with Texas scrub oak, offers a distinctly regional interpretation of peated whisky, while True Blue showcases 100% roasted blue corn in a uniquely Texan grain profile. Balcones has firmly placed Texas on the global whisky map.
