Ailsa Bay is a single malt Scotch whisky distillery established in 2007 by William Grant & Sons, located within the Girvan complex on the southwest coast of Scotland. Named after the striking volcanic island of Ailsa Craig visible from the shores of Ayrshire, the distillery was designed with precision and consistency at its core. Unlike many traditional Scottish distilleries where variables can be difficult to control, Ailsa Bay was engineered to allow fine-tuned management of peat levels, fermentation times, and distillation parameters — enabling the production of multiple distinct flavour profiles under one roof. The flagship expression, Sweet Smoke, masterfully balances rich sweetness with measured peatiness, offering notes of vanilla, lemon zest, toffee, and a gentle coastal smoke.
